Love to visit again!
The service was excellent - greeted at the door, help offered constantly, and always with a smile and pleasant attitude. Very clean. Great location. The only drawback is the relative high price. But you get what you pay for. Great for business travel.

Scallops, Quail & The Travelling Gourmet
MARRIOTT Singapore always has unique Food & Beverage promotions and just last year, I was the first gourmet in the world to match Durian and wines at the Marriott. Recently, Chef Darren Ho of Terroir restaurant in Hungerford Hill Vineyard, was at the Marriott Singapore for an Australian Food & Wine Promotion at their al fresco Garden Terrace poolside restaurant. Hungerford Hill Vineyard in the Hunter Valley of New South Wales is one of Australia's top wineries. Jovial Darren who has a Chinese Cantonese father and an Australian mother, comes from a family of chefs. Knowing my love for all things concerning food and wine as The Travelling Gourmet, Chef Darren very kindly taught me some of his delicious ModOz (modern Australian) recipes with a Cantonese twist. We had a really fun time in the kitchen cooking up with passion, sweet and sexy Scallops stuffed with onions brunoise sauteed with chinese black bean sauce in extra virgin olive oil. After we painstakingly cut slits in the scallops we piped in the onion and black bean mix. Then we pan seared them for 1 minute on each side to caramelize the outside of the scallops leaving the inside just cooked. Served with a super fresh salad of raw beetroot cut into long strips like capellini (angel hair pasta) dressed with a vinaigrette of balsamico and olive oil, it was superb! It went wonderfully with two sauces, a lovely vibrant yellow coloured saffron beurre blanc butter sauce plus a tangy cider & star anise sauce. A lively wine to complement the scallops is the Hungerford Hill 2003 Clare Valley Reisling which has such mind blowing intense petroleum and lemon grass notes; very different from most New World Reislings. Next, we made a crispy skin quail that had been carefully de-boned and then shaped to look like a breast. We fried the lower side just to hold the shape, and then oven poached the bird in a master soy stock made with chinese herbs for 15 minutes. Dipping the quail infused with the delicate flavours of the master soy stock in a special frothy mix of cornflour, vinegar and baking powder, it was flash fried so the skin is soooo crispy like parchment thin potato crisps...while the flesh inside is moist, juicy and flavourful! Tasting this by the pool surrounded by lush tropical greenery, which is like an oasis of peace in the hurly burly hustle & bustle of sunny Singapore's 5th Avenue that is Orchard Road, was a sublimely memorable experience. A nice wine to go with the quail is the plummy Hungerford Hill 2002 Tumbarumba Pinot Noir. Chef Darren explained to me how he prefers to cook the dish to complement the wine. As we talked I could sense his passion for food & wine as he recalled how from a very young age, he was baking and making pickles in the kitchen. Darren also makes Lucky beer, an organic beer in a green bottle with a laughing Buddha. Enjoy! By Dr. Michael Lim The Travelling Gourmet who is renowned Travel, Food & Wine Writer/Editor in Asia.

Great value for the money
Checking in was very efficient and fast. They even remember my name after I checked in and always address by my last name each time I go up to the counter. Very friendlt atmosphere and in a good location (walking distance to quite a few places). The subway is also close by and you can catch the subway to almost anywhere in Sinagpore. The room is clean and fresh smelling as you enter the room. Bathroom and amenities are great. You may pay a little more staying here but its worth it. They make you feel just like home.

Not so good
We spent Christmas in this hotel a couple of years ago, and it was a big disapointment. The room (orchard road side) was small and there was a lot of noise from the road. The double glazin was not sound proof. The lists were not syncronised and the main entrance looked like it needed to be redecorated. Water from the roof swimming pool had damaged the ceiling of the lobby. At night there was a lot of noise in the corridor and cmplaints to the reception brough no reaction.
