Since 1962, this non-chain restaurant has been one of the crown dining jewels of the Colorado Springs area. Patterned after an adobe building, the interior, thankfully, does not go crazy with excessive southwestern motifs. It is casual, yet subtly classy, and is reminiscent of something one would expect to find in Taos, New Mexico. Chalupas, enchiladas, tacos and tamales dominate the menu. As a nice surprise, especially for a Mexican restaurant, there are also several vegetarian dishes, including the vegetarian chile. The full bar features eight Mexican beers.
