Chef George Mavrothalassitis brings his inspired fusion of Provencal French and nouveau Hawaiian cuisines to the table here. The menu is filled with such sinful dishes as Salade Folle (foie gras spread on crispy brioche medallions, served alongside tender baby greens) and Filet of Moi with a side vegetable of subtly herbed fennel fricassee.
