Excellent modern bistro cooking can be found at the prettiest of Joachim Splichal's five Pinot restaurants. The graceful dining room is filled with antiques and chandeliers and promises a special occasion upon arrival. The cuisine is Provencal and the menu is full of all the best of that region: olives, garlic, artichokes, lemons, eggplant and much more. Try the Braised Artichoke Barigoule scented with herbs or the fresh oysters on the half-shell. Other favorites include the roasted rack of lamb and crisp frites as well as the Roasted Rabbit with Rosemary. Don't miss the Garlic-Artichoke Mash, but be sure that your dining companions taste some of this fragrant dish too, so you can all share in the garlicky "afterglow".
